Loaded Breakfast Naan

What's your go-to breakfast? This loaded breakfast naan with chargrilled peppers, avocado, sweetcorn, and egg is a surprisingly satisfying combination. The soft, pillowy naan is the perfect base for all your favorite breakfast toppings!

Ingredients

  • 2 naan bread
  • 1 avocado sliced
  • 5 turkish peppers or any kind of sweet peppers
  • 2 eggs
  • sweetcorn
  • 1 spring onion finely sliced
  • lime juice
  • 2 tbsp yogurt
  • cress
  • hot sauce
  • cherry tomato half

Instructions

  • Heat a little oil in a large frying pan over a medium heat. Heat the naan for 2 minutes on each side until it is completely warmed through. Remove the naan, and crack 2 eggs into the same skillet and fry sunny side up.
  • Chargrill the peppers on a hot griddle pan until they start to char and you can hear the seeds popping inside.
  • Top the naan with all the other ingredients and serve immediately.

Notes

You can add any other toppings you like to your naan bread, the combination above is my favorite!
