Spicy Sweetcorn and Potato Fritters

Try these super quick, easy, spicy sweetcorn and potato fritters for a fun brunch, or just a lunch snack! They are quick to whip up and absolutely stuffed full of wonderful flavors and crunchy texture!

Ingredients

  • 2 potatoes medium, grated
  • 1 sweetcorn
  • 1 red pepper diced
  • 1 red chili medium, diced
  • coriander chopped, small handful
  • lime juice half a lime
  • 2 tbsp all purpose flour
  • 1 egg
  • salt and pepper for seasoning.

Instructions

  • Finely dice the red pepper and chilli. Grate the potato on a large hole grater and cut the sweetcorn off the cob. Mix everything in a large bowl. Finely chop the coriander and add this to the bowl along with the flour.
  • Toss everything so it is evenly coated in flour. Beat the egg and add to the mixture with the lime juice and stir so everything is coated. Season with salt and pepper.
  • Divide the mixture into 8 equal parts and place in a large frying pan with a little olive oil on a medium heat. Press each fritter down gently with the back of a spoon or a spatula once it is in the pan to encourage it to bind together. Cook for 2 minutes then gently flip over and cook for 2 minutes on the other side.

Notes

Serve immediately with avocado and eggs cooked your favorite way!
